Oak, maple syrup and vanilla in nose. Little bit more alcoholic in the mouth but still drinkable. Nice medium finish.
Slight hint of amber maple syrup, bounces back and forth between brown sugar and molasses. Rocks chills it too much, but a splash of water takes out some of the booziness.
This is a nice neat rum. I found it to be real sweet with a strong Maple finish. It was smooth and the maple backed off as I finished the glass. Might be a bit sweet for me, but a good rum.

I read several other reviews before purchasing this rum, and their comments about maple syrup are right on target. Even the nose very heavy with the scent of maple syrup. A sip begins with a heavy maple syrup flavor that then develops a light alcohol burn. The burn that develops slowly, fades, and leaves the maple flavor to linger. It is pleasant for sipping, and it mixes very nicely in a Mai Tai as the dark rum topper. It is sweet, but not like a candy sweetness, so it blends with the other flavors in the drink nicely.
Sweet notes of maple syrup, definitely tastes of bourbon and sherry, good complex and balanced rum.
Really good rum to enjoy on the weekends, on the rocks with a drop or two of lime juice is the day to go.
Sweet a little spicy, yet with slightly bitter coffee notes.
"There is a fair amount of orange peel or marmalade like bitterness, especially on the finish and the aftertaste. ."

Pilar is a name synonymous with sportfishing and this rum would have been enjoyed by Papa himself. Well worth the price.
