So far from my experience: Sour Mix: 1 : 1 : 1-1/2 = Lemon Juice, Lime Juice, Simple Syrup Lime Juice Concentrate: You can buy Monin Lime Concetrate Syrup on Amazon, I use TrueLime (which you should probably use a bit less of since it isn't a syrup). doing this on rum over 55% ABV, for example a velier 69% is really too hot so ... but another example, the doorly s 14 is 48% but still smooth so no water ......

I wonder how it compares to the Plantation/eray Fiji? Haven't tried either, but I did see this new one last night at my local TWM. I do like the Perfección. I am curious about the Barbados as I do like Plantation/eray 5-year, but their XO is a total loss in my book. (I know, how weird is that?) Not sure I want to spend the $$$ on the Kaniché Barbados expressions because of it....

Got to try this. Last year the had Barcelo 30. I think it was 30 year anniversary not 30 years but was incredible in the 80-$90 range but sadly it appears gone forever. Was very similar to the E. Leon Jimenez also top shelf produced by Barcelo. Last trip Zacapa XO was done but -$8 for 2 bottles of Diplimatico Reserve so around $31 bottle for a good bar staple but a bit sweet. Dubai has a similar range, maybe a few more on offer but the prices are not really that competitive because it's a Mulism country, they import it so there's not really a saving if you know where to look online (in UK this would be Amazon).
