Paranubes se vyrábí v malém rodinném lihovaru v jihomexickém státě Oaxaca za použití 4 odrůd organicky pěstované cukrové třtiny, a to ve výšce 1 - 2000 m.n.m. Odrůdy třtiny jsou: Tipico, Dura, Negra a Criollo.
Třtinová šťáva se fermentuje 48 hodin ve dvou 1100 l borových kádích. Kádě se po vykvašení nikdy zcela nevyprázdní - destiluje se pouze polovina, druhá zůstává a slouží jako "kvasinkový základ" pro další várku. Během fermentace se přidává špetka vařené kůry mezquitu (prosopis čili naditec). Za den lze vyrobit max. 85 l tohoto rumu.
Aroma: Zasmrádlé, pronikavé a štiplavé - třtina, travnatost, cukrový sirup, nakyslost (citrony, zázvor), záchvěv zkvašeného ovoce.
Chuť: Tinkturová, třtinová, nějaké ovoce se opět jen mihne, jemně štiplavá, ale celkově jemnější.
Dozvuk: Hutná a silně nahořklá travnatost se sušeným ovocem (křížaly, rozinky). Střední, nahořklý.

Pohodový mexický nestařenec, ale nijak zvlášť mně nezaujal.
I expected acid, stench, odor and fermented soup. I expected that I would have a problem drinking this rum, because I often read such comments about it.
I open the bottle and smell the faint smell of ketchup, olives and brine.
I take the first sip and feel sweetness, reed, flowers and many pleasant notes, although there is also a hint of brine.
The finish is warm and long.
For me, Paranubes is a really great rum for typical sipping. It is a very tasty and rich rum. He is balanced, although he has a feistiness in him. I recommend everyone to try this unique alcohol.
Wow, this is wildly different! It does not taste or smell like any other rum I’ve had. The nose is very fruity with some sort of plum note, I can’t quite put my finger on it. It does not have the earthy funk I get from a Agricole, the taste is fruity and somewhat tart. It is unique for sure, but probably not something I personally would reach for.

His comments spot onto me. Will be buying another bottle.
Very much in the clairin camp this - Sajous in particular.
It's briney and slightly sour, and vegetal, and it has that somewhat overpowering smell that quickly fills the room abd attacks your senses.
Pretty smooth with it though. I find it much more drinkable neat than most clairin, or most white rum for that matter.
Al naso è rotondo e morbido con maturati e fermentati, vegetali, mais, peperoni verdi, litchi, canna da zucchero, aceto e qualcosa di floreale.
Al palato invece è totalmente diverso, ha note di datteri affumicati, miele e canna da zucchero, nel finale anche umami/esteri e un po' di sapidità. Sembra avere 10 gradi in meno e conserva una buona rotondità. Nel bicchiere vuoto lieve arrostito. Particolare e interessante
This stuff is so much fun! Grassy, kero, crystalised sugary and buttery aromas fun! One glass will keep you occupied as long as like tasting new flavours. I discovered that, for my tastes, its too much for a Daiq (half and half with something else would probs be great!). Very happy to have it in the cupboard for the adventurous!

Flavor: just so very delicious. Grass, yeast, makes me want to eat a piece of pizza.
