Rums assembly of Trinidad and Tobago, Barbados and Guyana. These rums are individually aged in bourbon casks for 3 to 5 years in their home countries in the Caribbean, then imported and assembled in Europe.
The blend is then aged 7 months in cask of whiskey from Talisker, Scottish distillery on Skye. A beautiful light gold color with on first nose : Peat , peat and peat ! Over time, gradually, the sweetness of the rum comes back with notes of fruit and vanilla. On the palate, the attack is frank about whiskey and peat but the rum is smooth behind. In the end, the peat is persistent but we feel vanilla and roundness rum aftertaste. The 3rd version just arrived with 2 smokey tea for the finish. Florent Beuchet : you are crazy ;-) Real rate : 7,5

Beautiful and thin in the glass , this CDI can be describe as really ... smokey !.
From the first inspiration till the finish, you will be surrounded by peat aroma but ... not only that.
After a while come some fruit aroma especially banana flavor but not too much.
In mouth , this rhum is quite smooth once the first little burn is gone.
A little bit too marked by the aging in bourbon casks but that's the essence of this CDI Boulet de Canon 2 :-)
