While made in Calgary, this Rum is reported to be made from Canadian molasses, distilled in a hybrid copper pot still, matured in used bourbon casks from Woodford Reserve in Kentucky and finished in oloroso sherry casks imported directly from Spain. So I’m expecting a lot from this Rum. So let’s dive in! (I review in real time)
In the glass it’s a light amber, more so than other amber Rums, but then that’s not really the most important aspect of Rum. The nose is rich, a bit spicy with notes of pineapple, brown sugar and apricot. Lovely.
On the lips the first hit is soft, almost nonexistent. Quickly however heat develops when you pull it into your tummy. You feel it mostly on the lips. In the mouth the flavour is mild, kind of shy. Reminds me slightly of an agricole from Martinique.
In the mouth the heat grows quickly and persists in the throat. The flavours based on it’s molasses and cane sugar origins don’t stand out and that’s a shame. There’s a lot of sherry flavours in there in contrast to the sweet richer flavours expected. It’s also a bit tart. In the finish, the woodiness comes through. The oakiness is easily detected. If you like Scotch, this would be a nice Rum for you.
Light golden color, with hints of vanilla, possibly sherry from the aging. Smooth taste, a little burn. Lingering... A little bit of ice seems to sweeten this up.
It's a nice young amber rum. I don't think this is preferred for sipping, though I had two glasses that way while writing this. I'll need to find a mix for it.
Very good job for a new local distillery.

what an experience. very enjoyable. this rum was not our favorite but it was a high flyer and a great sipper to be sure. not very assertive on the nose but the taste was very enjoyable. sweeter than some but not overly. finish was weaker than expected but very pleasant and not aggressive with alcohol
