Ocean aging
So, I found out about Jeffersons bourbon that gets aged on a ship out at sea. This I might have to try even though I'm a rum pirate! My question is why haven't we seen this with rum? Like, in the old days rum was on board just about every ship sailing. I wonder if the rum back then, on those ships, was maybe different from the land based rums due to it being on board ships at sea. Hopefully a distillery out there will sooner than later try this method.

I know of two places that actually age their rum in barrels placed under sea water!!! They come from Grand Cayman and Key West. Since I did not read any good reviews on either, I just forgot who they were and never bought any. I did remeber one word from Grand Cayaman and it looks like Seven Fathoms.
I did some research for you. Seven Fathoms Rum is only availabl;e on Grand Cayman. Other than cruise ship passengers, two types of people fly in for exrended stays: scuba divers (like I was fo 10 years) and those dealing with their extensive offshore banks.
As for Key West, this distillery fills up new barrels with sea water from a few blocks away and then drains the barrels to cure them. These barrels are used for their premium rums shown in this link.

i know this storing in ships is made also to a cognac brand (kelt) and every bottle have
on the neck a little depliant asying what harbours the ship visited while having those
barrels in, this is to imitate what was done centuries ago for example with port and madeira fortified
wines, don t know for rum, oh i remember also a bourbon brand doing this ...

Paul, Wow, I was at the key west distillery last month. They are into flavored rums and will be needing a few years under their belt to compete in the premium market. Although their rums are young I enjoyed them. I found them by chance as they were right around the corner from the hotel. I walked by and thought it to be just another bar and something made me do a double look and I was quite surprised! The addition of two distilleries both on the same block just adds to the fun to be had in Key West!
